Apples

Every apple is a good apple.  Putting them up for the winter is a great way to save the best flavor.  So, I like putting them up two ways.

The first way is peeling the apples with a apple peeler corer slicer, or just the old time peeler and a paring knife.  Get a big bowl and add lemon juice, about a half cup and  water to about half.  Then start cutting off anything bad, peel the apple. cut into four slices and cut out seeds and then slice and drop into lemon water.   Now continue this process until you fill the bowl of apples up.  Now that my bowl is full, strain off the apples from the lemon water and put into freezer bag.  I ways put the date of the on the apple bag and freeze.  Now these apples are ready for anything you want to cook up like apple pies, apple bread or just  cooked apples in a frying pan with some butter and brown sugar.   I call this, good eating.

Now secondly, I love to make apple pie.  To me the apples will always take on a brownish look about them.  This does not matter. Just add 3/4th cup sugar with 1 Tablespoon of Vanilla, with 1 1/2  to 2 Teaspoons of Tapioca and 1 teaspoon of Cinnamon.  Mix this with all the apples and put into your pie crust.  Now bake  this in the oven for 425 degrees for 15 minutes then, without opening up the oven door, reduce oven to 350 degrees and bake for 45 minutes longer.  Notice the inside of your pie will be boiling.  Your pie is finished.

 

Hello, I work in my garden for many reasons, one being that I love to spend time growing my own food, this way I know what I am eating. I like seeing how the plants grow and it really takes me a couple of growing seasons to get to know the plants and how to preserve the seeds for the next growing season. However, I could never do any of this without my husband, Mr. Mike. He is a wonderful inspiration of, " come on Mom, "let's plant a garden ,it's time to plants peas first and so on.
